Sometimes referred to in Israel as Locus. This cylinder shaped cut is smooth and free of fat other than a thin external layer on one side. As it has no fat it is quick to dry and not necessarily an easy cut to work with. You can cook it in liquid, stuff it, cure it or wrap \ embed it with fat. If you do - the flavor is highly affected by the type of fat you use (olive oil, duck fat, etc).
