This cut is very large (about 8 KG) and pretty fatty. It is thick on one end and thin on the other with layers of meat and fat. It is fibrous and has a bold flavor to it. It's good when slow cooked, or if you separate the fat - great as ground beef for kebabs, sausages or patties. The strong flavor and the texture only hold up when it's fresh though.
